Chickpea and aubergine makhani

Ingredients

1 300g Tiger Tiger tinned chick peas
2 large Aubergines
1 jar Tiger Tiger Murgh Makhani simmer sauce (also called Punjabi butter chicken)

Method

1. Chop the aubergines into large cubes (2-3 cms).

2. Open and drain can of chick peas.

3. Heat a little oil in a pan then add the aubergine and fry for 2 minutes.

4. Add chick peas to the pan and cook for a further 1 minute.

5. Open the Tiger Tiger Murgh Makhani simmer sauce and pour over the vegetables and simmer for 10 minutes.

6. Serve with Tiger Tiger Basmati rice, Tiger Tiger Poppadoms and Tiger Tiger Mango Chutney.
