Tandoori chicken drumsticks

Ingredients

4 Chicken drumsticks
50 ml natural plain yoghurt
2 tbsp Tiger Tiger Tandoori Paste
1 onion
1 red pepper
½ a round lettuce

Method

1. Preheat oven to 180 degrees (fan assisted).

2. Wash and pat dry chicken drumsticks using absorbent kitchen paper.
Using a sharp knife score the chicken drumstick with two diagonal cuts
and place in a mixing bowl.

3. Dice the onion and pepper to 2cm square.

4. Add to the chicken in the mixing bowl along with the 50 ml natural plain yoghurt.

6. Add 2 heaped tbsps of Tiger Tiger Tandoori Paste to the bowl, mix well and set aside to marinade for one hour.

7. Grease a baking tray and spread the chicken mixture onto the tray and bake (uncovered) for 30 minutes, turning once after 20 minutes.

8. Finely chop the lettuce and arrange on a plate with the cooked chicken.

9. Garnish with fresh corriander and a lemon wedge to serve.
