Warm Duck and Mango Salad

Ingredients
450g / 1lb Skinless Boneless Duck Breast
1 tsp Chinese 5 Spice Powder
1 tsp Oil
For the dressing
1 lime, juice of
1 tsp Tiger Tiger Fish Sauce
1 tbsp Tiger Tiger Soy Sauce
2 tsp Clear Honey
For the salad
1 small Mango, skinned. stoned and cut into matchsticks
100g / 3.5oz Tiger Tiger Bean Sprouts
4 Spring Onion, shredded
Fresh Mint Leaves
Toasted Sesame Seeds, to garnish
Method
1) Cut the duck into 1cm wide strips and mix with the five spice.
2) Heat a wok and add the duck and stir fry for exactly 2 minutes until nicely
browned,
3) Transfer to a large bowl and stir in the lime juice, fish sauce, soy sauce and clear honey.
4) Set aside to cool to room temperature.
5) To serve place the salad leaves in a large serving bowl and toss with the mango,bean sprouts and duck with dressing.
6) Scatter over the shredded onions, mint and sesame seeds and serve
back
