
Ingredients
4 salmon fillets
3 tsp lemon juice
100g / 4oz onion chopped
55g / 2oz fresh coriander
3 tbsp natural yoghurt
100g (1/3 jar) of Tiger Tiger Vindaloo paste
Method
1) Use 3 tsp lemon juice over all 4 fillets and set aside,
2) Prepare 4 separate sheets of oil foil and set aside,
3) In a large bowl, mix yoghurt and vindaloo paste, adding coriander and
chopped onion,
4) Carefully place salmon fillets in the mixture and ensure the fillets are
completely covered,
5) Place the fillets on the separate pieces of foil and spoon 1-2 tbsp of paste
mixture evenly over each fillet,
6) Wrap up the foil into parcels and leave to marinate for 2 hours,
7) Place in over on on BBQ for 15 – 20 minutes until salmon is cooked
through, remove from foil and consume.
