
Ingredients
4 x 175-225g/6-8oz swordfish steaks
3 tbsp olive oil
1 red onion, finely chopped
1 tsp Tiger Tiger Minced Red Chilli
1 tsp Tiger Tiger Minced Green Chilli
2tsp Tiger Tiger Curry Powder
1 tsp Tiger Tiger Cumin
2 tsp cayenne pepper
finely grated zest of 1 lemon
2 tbsp lemon juice
sea salt
Method
1) Place the swordfish steaks into a shallow dish.
2) Heat the oil in a pan, add the onions and the chilli and cook gently for about
4 minutes until soft but not brown.
3) Add the curry powder, cumin and cayenne pepper and cook for another 2-3
minutes, stirring continuously.
4) Remove the pan from the heat and stir in the lemon zest, lemon juice and a
little salt.
5) Pour the mixture over the swordfish, turn once and leave to
marinate for 1 hour.
6) Barbecue the steaks over medium-hot coals for about 10 minutes, turning
and basting with the leftover marinade now and then, until they are browned
on the outside but still moist in the centre.
