Fiery Fish Koftas

Recipe

Ingredients
450gr / 1lb White Fish Fillet, cooked and flaked
4 slices White Bread, soaked in water and squeezed dry
1 medium Onion, peeled and chopped
1 tsp Tiger Tiger Minced Ginger
1 tsp Tiger Tiger Minced Garlic
1 tbsp fresh Coriander Leaves, washed and chopped
1/2 tsp Ground Black Pepper
2 tsp Salt
2 tsp Tiger Tiger Minced Green Chilli
2 egg white
50gr 1.5oz fresh Breadcrumb
Oil, to deep fry
Method
1) Chop bread into cubes and put into a food processor/grinder,
2) Cover and process until you have breadcrumbs, Mix fish with the soaked
bread in a bowl,
3) Add onion, ginger, garlic paste, coriander leaves, black pepper, chillies and
salt,
4) Mix well to form a dough,
5) Divide this dough into 16 portions,
6) Mould them to the required round kofta shape,
7) Chill until firm,
8) In a medium sized bowl, beat egg whites, one at a time, until light and fluffy,
9) Dip each kofta in the egg white,
10) Then, roll each kofta in the breadcrumbs,
11) Toss to coat,
12) Heat oil in a wok.
13) Deep fry 3 or 4 koftas at a time, on either side, until golden.
14) Remove on clean paper kitchen napkins to drain excess oil.
15) Transfer to a serving bowl.
